Ingredients
450g cooked lobster meat, cut into small bite-sized pieces.
70g finely chopped celery
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons fresh lemon juice
85g good quality mayonnaise
6 Split top Brioche hot dog buns
Softened salted butter
Fresh chives
To serve
Fresh lemon wedges
Method
1. In a large bowl mix together the lobster meat, lemon juice, celery and mayonnaise together and season with the salt and pepper.
2. Split the hot dog rolls open and lightly butter them inside. Now add the buns to a frying pan (butter side down) and toast until golden brown.
3. Assemble the rolls by filling each roll with the lobster mixture and add a wedge of lemon. Sprinkle with fresh cut chives (optional).
4. Serve with a glass of chilled champagne.
