The Montauk Granola

Start your day with a crunch! We’re sharing our favourite homemade granola recipe that’s easy to make and oh-so-delicious. Perfect for topping your yogurt, sprinkling on smoothie bowls, or enjoying by the handful. With a full ingredient list and a step-by-step guide you can get ready to fill your kitchen with the irresistible aroma of toasted oats and nuts!


Ingredients

  • 8 cups or 760g rolled oats (we use Flahavans Organic Oats)
  • 1 cup or 150g pumpkin seeds
  • 1 cup or 150g sunflower seeds
  • 2 cups or 200g pecans
  • 2 cups or 320g almonds (we use whole almonds with skin on)
  • 2 cups or 200g walnuts
  • 1 tablespoon coarse sea salt (we use Maldon Salt)
  • 1 cup or 330g maple syrup
  • 1 cup or 200g of light olive oil
  • 2 cups or 270g dried cranberries

Instructions

  1. Preparation: Preheat the oven to 160°C (fan-assisted) or 325°F.
  2. In a very large mixing bowl, mix the oats, pumpkin seeds, sunflower seeds, pecans, almonds, and walnuts.
  3. Transfer 4 cups of the oat and nut mixture into a food processor. Pulse until coarsely chopped (don’t over pulse). Now repeat this step with the remainder of the mixture.  You should now have a large bowl of roughly chopped nuts.
  4. Add the sea salt and stir into the mixture. Drizzle the maple syrup and oil over the top, stirring well with a large spoon.  This will take a couple of minutes as you will want to ensure all the nut mixture has been coated.
  5. Bake:
    • Spread the granola evenly across two shallow roasting trays about  (1 inch) deep.
    • Stir every 20 minutes to ensure even baking and prevent burning.
    • Toast the mixture to a gorgeous golden colour, which should take approximately 40/45 minutes.  Your kitchen will smell heavenly.
  6. Once baked, remove the granola from the trays and transfer it back into a very large bowl.
  7. Let cool for 10 minutes and then stir in the cranberries.  You can use any dried fruit but we like cranberries because they are yummy and, well... they look nice in the granola.
  8. Let the granola cool.  Try not to eat it at this stage.  Tempting we know.
  9. Transfer it to a gorgeous large glass canister with an airtight lid.  Makes approximately 4 litres.  Will keep for 2 months.

Serving Suggestions

Enjoy with organic natural yoghurt and fresh fruit.  We like to serve ours with organic Greek style yoghurt, fresh blueberries, strawberries and chopped banana.
